What this test is actually measuring
This is a test of visuospatial working memory: the short term store that holds where things were for a handful of seconds. It is the faculty you use when you glance at a car park, walk into a shop and still know roughly where you left the car. It is not long term memory, and it is not a general measure of intelligence. It fades fast by design, because a system that permanently recorded every layout you ever glanced at would be worse than useless.
The reason the board grows as well as the pattern is that a fixed grid stops being a memory test after a while. If the board were always four by four, a pattern of twelve squares would be easier to remember as the four blanks rather than the twelve fills. Growing the board keeps the task honest for as long as you can keep climbing.

The trick everybody discovers
Watch what your mind does around level nine. Almost nobody remembers eleven separate squares as eleven separate facts, because working memory does not hold that many independent items. What happens instead is chunking: you stop seeing squares and start seeing shapes. Three in a row becomes a line. Four in a block becomes a square. A scattered pair on the far side becomes one thing, over there.
This is the same mechanism that lets a chess player glance at a board and reproduce it, and the same one that fails completely when the pieces are scattered at random rather than in a plausible game position. Chunking is not a memory trick bolted on top of the system. It is how the system works, and the reason a limit usually quoted as about four items can carry far more than four squares.
Which is also why practice improves your score here quite quickly, then stops. You are getting better at finding shapes in noise, not at holding more raw items. The number memory test shows the same effect even more clearly, because digits chunk into familiar groups like phone numbers and years.
Why your score changes hour to hour
Working memory is unusually sensitive to state. Sleep debt hits it harder than it hits simple reaction speed, and so does doing the test with something playing in the background. The pattern is held by active attention rather than stored somewhere safe, so anything competing for that attention takes squares off your score directly.
If you want a fair comparison against yourself, run it at the same time of day, in a quiet room, without music with words in it. People routinely find two or three levels of difference between a tired evening attempt and a fresh morning one.
The rest of the memory tests
Visual memory is one of four related tests here and they stress different things. Sequence memory is about order rather than position, which turns out to use a different mechanism: people who are strong here are often only average there. Number memory measures verbal digit span, the most studied span task in psychology. The chimp test combines position and order under time pressure and is the hardest of the four for most people.
